Ingredients:
3/4 Cup Balsamic Vinegar
1/4 Cup Olive Oil (or 3 parts vinegar to 1 part oil for larger batches)
2-3 Tbsp Honey
1 Cup Fresh Spinach (Baby leaves are the best)
4 Tbsp Crumbled Gorgonzola Cheese – as much as you like really
1 Bag Toasted Pine Nuts


Instructions and Notes:
With a wisk, mix the vinegar, olive oil, and honey. Add one tablespoon of honey at a time and taste between each until you are satisfied.Once satisfied with the taste, prepare the fresh spinach, add crumbled gorgonzola cheese, and then the pine nuts. Finally, pour the dressing over the salad and toss immediately before serving. Serves 6. Thanks to Greg and MJ for this one!!!
