Vada’s Carrot Cake

Sift together…

2 C. Flour
2 C. Sugar
2 tsp. baking soda
1 tsp. salt

4 eggs

1 1/2 C. oil

Beat eggs well, add oin and beat. Add to dry ingredients.

Add 3 C raw, grated carrots, 1 C. coconut. Mix well.

Bake in a 13x9x2 greased pan for 45 min @ 350 degrees.

Frosting…

1 stick of butter

1 3oz. pkg of cream cheese

1  tsp vanilla

3 C. powdered sugar

Cream with beater and spread on cake.
