Bruschetta with Tomato

2 Large Vine ripened tomatoes, cored, seeded and chopped
2 Tbsp Chopped arugula or basil.
2 Tsp Olive oil, preferably extra vergin
1 Tbsp Red wine vinegar
1/2 Tsp Finely chopped garlic
1 pinch ground black pepper to taste
8 slices Italian Bread – approx. 3/4 inch thick

Instructions and Notes:
Prepare a grill. In a medium-sized bowl, stir together tomatoes, arugula or basil, olive oil, vinegar, garlic, salt and pepper. Set aside. Grill bread on both sides until lightly toasted. Spoon the tomato mixture on top and serve immediately. Serves 4.
